Egg Nog recipe

Someone at group recently asked for an eggnog recipe. Here is one i got off the Susan Maria web site:

(I have not tried this yet as I never was a fan of eggnog but if YOU try it, please post a comment on how it was!)

LINDA'S EGGLESS EGG NOG

One 1-ounce pgk sf instant vanilla pudding powder
1 cup half & half (can use fat free)
5 cups milk
3 tablespoons Splenda granular
1 1/2 teaspoon nutmeg
1/4 teaspoon cinnamon
2 teaspoon brandy or rum extract
1 teaspoon vanilla extract

In large bowl whisk together pudding powder and half & half until dissolved. Whisk in until smooth milk, Splenda, nutmeg, cinnamon, brandy extract, and vanilla. Pour into a large pitcher and allow to chill for at least 2 hours. If mixture becomes too thick add a 1/4 cup milk at a time and stir to blend. This is thick, but not overly so.

(*someone asked about sweetened condensed milk and Linda's reply was: "The sweetened condensed milk sub would make it very sweet. This recipe is VERY close to real as is. I love to use it as creamer in my coffee. I know people will want to make it with MM. That would work...just leave out the Splenda until after it's mixed and then adjust sweetener to taste.")

I've had a similar recipe sitting around here since last year and finally tried it and thought it was Very Good.
2 scant Tbls. sugarfree instant (Jell-o brand) white chocolate pudding mix, 2C. skim milk, 2 tsp. ea. French vanilla blend & imitation rum extracts mixed in a blender.
Serves 2 @ 115 calories ea.
I'm still often enjoying your recipe for the 'Breakfast Muffins in a Minute' with the flaxseed meal!
